Ingredients
  • 3 cups whole wheat flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/4 cup unsalted butter melted
  • 1/4 cup canola oil
  • 1/4 cup smashed banana about 1 small ripened banana
  • 2 large eggs
  • 1 and 1/4 cups Bolthouse Farms® Banana Honey Almond Butter Protein Shake
  • 1 teaspoon vanilla paste
  • dried bananas for garnish

Instructions

  1. Heat the oven to 400°F. Spray a 12 cup muffin tin with nonstick spray or line with paper liners. Set aside.
  2. In a large bowl, combine the flour, baking powder, baking soda, and salt. Stir with a whisk and make a well in the center.
  3. In a separate large bowl whisk the sugar, butter, oil, banana, eggs, protein shake, and vanilla together until well blended. Add to the flour mixture and stir just until combined.
  4. Divide the batter evenly among the prepared muffin cups. Cups will be filled to the rim. Top each muffin with a slice of dried banana.
  5. Bake for 16 to 18 minutes or until a toothpick inserted into the center comes out clean. Cool the muffins in the pan on a wire rack for 5 minutes. Remove muffins and cool for 10 minutes longer
