Taco Burrito Bowls are a family favorite meal! Let everyone build their
own bowl for a fun do it yourself dinner. Turkey taco meat simmers on
the stove top to make these burrito bowls so flavorful. Add on all the
fresh veggie toppings for a healthy dinner.

Think a giant cookie stuffed with a surprise!
We love
tex-mex food at our house. Anything with rice, beans, cheese, and
avocado is basically my best friend. I knew these turkey taco burrito
bowls would be a hit because everyone can make their own just the way
they like it. Set out some bowls or a platter with different taco
toppings and let everyone go to work creating their own burrito bowl.
Pico de Gallo, shredded cheese, chopped olives, sour cream, avocado,
guacamole, jalapenos, green onion…. the list could go on and on.
Basically whatever you like on your tacos or inside your burritos is
fair game.
The turkey
taco meat simmers on the stove top and it is seriously loaded with
flavor. I prefer ground turkey over ground beef, but you can always use
ground beef if that’s what you prefer. Add in some corn and black beans
and you have a hearty and filling taco meat mixture for your burrito
bowls.
I normally
will make some pico de gallo but seeing as how my 3 month old is
teething. Yes! Teething! {side note: I did not think that it was
possible to teeth so young. But it is.} He never wants to be put down
and his little tears running down his face just make it impossible for
me to do so. I’m a sucker for cute little chubby babies I just knew that I would not have the arms available to be chopping up tomatoes, cilantro, and onion for a pico de gallo.
So I bought some at the store and it was delicious. Same with the
guacamole. I normally will mash up 2 avocados, squeeze the juice of 1
lime, and add a couple pinches of salt to make my own. But, again, the
cute chubby teething baby makes it impossible. So I just bought some and
it was delicious.
I love
serving these burrito bowls with cilantro lime rice. The key to cooking
rice without it being wet and mushy is to use Basmati Rice. It’s a bit
more expensive but if you hate when rice turns out wet and mushy then
try Basmati. It cooks better and always comes out fluffy and dry.
I have this stove top cilantro lime rice recipe on the blog. Or for an easy rice cooker version this is what I do:
Combine 1
1/2 cups dry basmati rice + 3 cups liquid (I do 1 can {14.5 oz} chicken
broth + water to equal 3 cups) in the rice cooker. Cook.
While rice
is cooking combine a small bunch of chopped cilantro, juice of 2 fresh
limes, and 1 teaspoon granulated sugar. Stir together and pour over the
hot rice when it’s done cooking. Stir to combine and fluff the rice.
It has a
subtly sweet lime flavor and it’s so easy cause the rice cooker does all
the work. You can use any rice you want. Even the heat and serve
microwave pouches. Or just cook plain white rice. There are so many fast
and easy rice options in the grocery store. Just use one that you love.

Turkey Taco Burrito Bowls
Turkey
taco meat simmers on the stove top with corn and black beans. Create
your burrito bowls with rice and your favorite toppings.
Ingredients
- 1.25 lbs ground turkey
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon oregano
- 1/4 teaspoon paprika
- 1/4 cup all-purpose flour
- 1 can (14.5 oz) beef broth
- 1 can (8 oz) tomato sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
- Cooked rice
- Taco toppings; shredded lettuce, pico de gallo, cheese, avocado, olives, guacamole, sour cream, tomato, lime wedges, etc.
Instructions
- In a large nonstick skillet, over medium high heat, cook the ground turkey with the salt & pepper until cooked through and no longer pink, breaking the meat into small pieces as it cooks. Drain.
- Add the cumin, garlic powder, chili powder, onion powder, oregano, paprika, and flour. Stir the mixture constantly for 1 minute while it cooks. It will be crumbly (that's ok).
- Slowly add the beef broth, a little bit at a time, while whisking to let it thicken up. Add in tomato sauce and stir to combine.
- Bring to a boil. Once boiling add the black beans and corn.
- Turn heat to medium and let simmer for 15 minutes or until thickened.
- Serve with rice and taco toppings for delicious burrito bowls.
Notes
It's
easiest if you combine the spices and the flour into a small bowl. That
way when you are ready for it you can just dump all at once and then
stir.
To make this a quick, 30 minute meal. Prepare
and chop your toppings while the meat mixture simmers. Put the rice in
the rice cooker or on the stove top first thing.
