Preserved Lemon Salsa, Oven Baked Eggplant
So this happened, I was very, very happy that it did.
The eggplants from the OSFM this time of year are tiny and super delicious. Fish and eggplant are a match that go beautifully together. I know I tend to like my eggplant with a little more brown on them than most people, I'm okay with that.
I am going to have to make a run to the fish mongers soon. I'd like to hit them up on a Friday morning as that's when they have fresh fish. I'm curious as to what and where they are from.
