Roasted Onions, Pears, Arugula, Cambozola
Inspiration was somewhat lacking last night, I'm still stuck on concord grapes. I wasn't into the thought of mostarda, that concord jam though....
Roasted a chicken, heavily rubbed with cumin and salt. Didn't brush the concord jam on until the very end.
This was a one pan meal, high heat oven, first chicken and onions, pears added closer to the end of cooking. I thought about rice or potatoes, just didn't have the energy.
Super delicious salad, satisfying, could have used a little tartness. I think next time, a little balsamic stirred into the jam to give it that little lift.
